Broccoli (Brassica oleracea L.var) is a brassica genus plant,which is a member of the Brassicaceae family. Originating growing at Italy along the Mediterranean Coast, it has been cultivated for more than 2000 years. Currently, China produces the highest broccoli production, followed by India. But broccoli as one of the most healthy vegetables becomes popular and well consumption all over the world.
It is well-known that broccoli is a kind of healthy vegetables with anti-cancer effect. Scientific researches showed that this is because of the 'natural anti-cancer factor' - sulforaphane, which is the strongest anti-cancer bioactive component in all natural anti-cancer fruits and vegetables so far. In fact, broccoli products sold in the market contains too little sulforaphane to prevent people from cancer.
With the development of the broccoli industry, researches found that among all kinds of products related to broccoli, the most effective anti-cancer products were from broccoli seed extracts and broccoli sprouts, which have higher levels of glucoraphanin (sulforaphane precursor). Glucoraphanin is mainly found in broccoli seeds , it can be converted into sulforaphane by myrosinase hydrolysis. At present, glucoraphanin and sulforaphane are the two valuable substances in the broccoli industry that have attracted much attention.
